Fried Rice is a popular and delicious Asian dish made by stir-frying cooked rice with a combination of vegetables, proteins (such as eggs, chicken, shrimp, or tofu), and savory seasonings. It's a versatile and quick meal that's perfect for using up leftover rice and creating a flavorful, one-pan dish.
2 cups cooked and cooled rice (preferably day-old)
2 tablespoons vegetable oil
2 cloves garlic, minced
1/2 cup diced onion
1/2 cup diced carrots
1/2 cup frozen peas
2 eggs, beaten
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1/2 teaspoon sesame oil
Salt and pepper to taste
Chopped green onions for garnish

Cook the rice ahead of time and allow it to cool. Cold rice works best for fried rice as it's less sticky. Dice the onions and carrots. Beat the eggs in a small bowl. Have all the ingredients ready before you start cooking.

Heat a large skillet or wok over medium-high heat. Add 2 tablespoons of vegetable oil and allow it to get hot.

Add minced garlic and diced onions to the hot oil. Sauté for about 2 minutes until the onions become translucent.

Stir in the diced carrots and frozen peas. Cook for 2-3 minutes, or until the vegetables start to soften.

Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until they are fully cooked.

Add the cold, cooked rice to the pan and stir-fry it with the vegetables and eggs.

Drizzle soy sauce, oyster sauce (if using), and sesame oil over the rice mixture. Stir to combine and evenly distribute the sauces. Garnish and serve.
